The Secret to our Pizzas at Ventuno Walsh Bay

Pizza comes in all shapes and sizes. Small, large, circle, square, thin crust, thick crust, stuffed crust, extra toppings. So what makes Ventuno’s pizza special? Our patrons visiting Walsh Bay love Ventuno for it’s outdoor terrace overlooking Sydney Harbour, the surrounding arts district, and of course the food. Our pizzas are the most popular menu item with classic Italian toppings. Head Chef Adam Spencer lets us in on the secret to what makes them so special.

The process is started with the dough which has a double leavening process that takes 48 hours. This process lets the flavour and corn gum fragrance develop within the dough and allows the yeast to ferment slowly. This ensures a well balanced, crispy base that is light in texture and gentle on the stomach. We use only the best flours from Molino, with a mixture of stone ground Tipo 1 and a mixture of Tipo 00 and corn flour with only filtered water.




Next comes the all important sauce. Ventuno’s pizza sauce is made from preserved San Marzano tomatoes, straight from Southern Italy. These are a plum variety of tomato that are recognised around the world for their thick flesh, minimal seeds and sweet flavour. They have been awarded ‘DOP’ status by the EU which specifies the precise grower, processing method and region in which the tomatoes are grown, to certify that they meet a strict criteria. At Ventuno, these tomatoes are simply crushed and seasoned with sea salt and basil.

What could be more important than the base and sauce used for a pizza? The cheese! At Ventuno, we use La Stella mozzarella, a local cheese maker that crafts Italian style cheese by hand using only the best Australian cow and buffalo milk. This is key to topping off every pizza with that cheesy finish our guests love.
