Jelly Bean Martini

Makes 1


45ml vodka
1/8 cup red & pink jelly beans
10ml lemon juice
Egg white (from 1 egg)
Sparkling wine (for garnish)


At least one hour before serving pour vodka over jelly beans in a small bowl. Cover, refrigerate.

When you are ready to serve, fill a cocktail shaker with ice. Pour jelly bean infused vodka, lemon juice and egg white into shaker. Shake and double strain into a cocktail glass. Top with sparkling wine and serve immediately.
